A lot has happened lately in a short period of time. I’ve been asked to work with Flatt Magazine, to help write some articles on local NYC restaurants!
Also, I recently had my holiday party at the SoHo House, where we held our first “SoHo House Iron Chef” in years. We were given one mystery ingredient with one hour to prep, cook and plate any dish we wanted, with free reign of our kitchen, since the restaurant was closed for the night! So awesome. I decided that the smartest dishes to make with my limited time were to be Southern. Come time to cook, we find that our mystery ingredient was pork - any choice of numerous cuts. I chose tenderloin and made a pork tenderloin and shrimp jambalaya with hush puppies and a jalapeño remoulade. It turned out great, considering we had an hour - I finished with about 30 seconds to run back and plate two plates for the chefs.
We had a lot of cooks, so it was divided into two heats. I won my heat! Overall, I placed fourth, but it was a proud loss to some of the most amazing cooks I’ve been able to work with.
I never went into the competition with the attitude that I would kick everybody else’s butt - it’s just not my style. But, I went into it with confidence in my ability, despite my obvious handicap against some educated, well-versed cooks. I took a dish that I’d hardly made before, followed with a side I’d never made before and created something traditional, but exceptional.
It was a great feeling to please the Chef.
He took me aside and told me something that made my day. ”You know, Bobby, I lived in New Orleans for nearly 11 years. It took some serious balls to cook a jambalaya for me. You did good.”
I did good, folks.
