Just a quick look into my work life. Chef Paul decided to take a photo with his camera-phone during one of the busier moments of the night.
We just had our highest grossing night last week, halloween eve. I spent nearly 35 or so hours working three days. Awesome.
I’m a firm believer that you can do or learn anything by immersing yourself into the field or passion of your choice, rather than going to school. I’m certainly not saying school is a bad choice, but when a friend tells me they want to go to bartending school to become a bartender, I say, “Why don’t you become a barback at some place, work your way up and get paid, rather than spend a bunch of money to learn what you could learn from a book?”
Perhaps it’s a bit unfair for me to say, though I certainly don’t knock anybody that has gone to school for their career or trade. But I can honestly say that, I feel, you can become anything you want, and learn it better, by working from the ground up, reading everything you can on the matter and showing yourself that you can do it. Nothing happens overnight, but it will come more naturally with time.
